more food


this is by special request.......
my friend Kelly wanted to see more food
on here - so here goes.....

Just in time for the autumn season

Ginger Bread Pancakes

mix dry ingredients:

1 1/3 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ginger
1 teaspoon cinnamon

mix wet ingredients:
1 egg
1 1/4 cup milk
1/4 cup molasses
3 tablespoons canola oil


mix wet ingredients into dry ingredients

i am assuming that you actually know how to make pancakes - if not i can't help you

Eat Less Meat




The UN's Food and Agriculture Organisation has estimated that meat production accounts for nearly a fifth of global greenhouse gas emissions. These are generated during the production of animal feeds, for example, while ruminants, particularly cows, emit methane, which is 23 times more effective as a global warming agent than carbon dioxide. The agency has also warned that meat consumption is set to double by the middle of the century.

'In terms of immediacy of action and the feasibility of bringing about reductions in a short period of time, it clearly is the most attractive opportunity,' said Pachauri. 'Give up meat for one day [a week] initially, and decrease it from there,' said the Indian economist, who is a vegetarian.

If you're doing a large, complicated character with radio controls, it might take a number of people several months to make it and if you're talking about a quick little hand puppet, it could be made in 2 days, so there's enormous range there, and no real easy generalities.

not my secret but it may as well be.....

civil liberties


idiazabal - is one of my civil liberties
putting money under my mattress
drinking wine in prescott - with people i just met
in a wine room at 61 degrees -

i know - freedom of speech, freedom of religion are true liberties -
but others like - tripping the light fantastic -
eating smores next to a roaring ember filled fire - sending lights up
into a pitch black sky - are civil liberties or should be

i think i (we) need to rethink what we should be doing and what our government
allows us to do - nothing anarchist in thought - but simply finding happiness again -

because our world is getting a bit tighter - a bit more askew -
our tomorrows are all of a sudden on the top of all of our priority lists

i know now that working for the next 30 years may end up being - the next 35-38 years - and i intend to be happy - -

so my civil liberties have changed a bit -
for the better...........

THE cookie

i have been making this certain cookie for three years or so -
( They are Francine's favorite )
and not very often - I call it an adult cookie
because its sort of sophisticated on the palate

i think of all the times i've made it - only once was the original
recipe - it is a interesting cookie
it is a spicy chocolate coffee cookie

it has cinnamon, cayenne and black pepper - bitter sweet chocolate chips and roughly chopped coffee beans - that is the original recipe

the last time i made them i substituted chipotle chili powder and semi sweet chocolate chips -


the next time which may be friday i want to switch out the chipotle powder
with aleppo pepper - my new favorite ingredient - its a crushed pepper from Syria

so not that the recipe is guarded but it is -
its my only truly " signature " recipe
that i make once a year .

take five

i am taking 5 for myself - - minutes probably -
its all i get anymore.....i've found out lately that im very felixble - or flexible - to the point of dis-location but not separation

so i corner well - and if bumped - i can right myself usually
and step back into my 5/4 lifestyle

fly....??


it turns out i can't fly after all - not that I actually tried -
but i sometimes close my eyes and spread my arms in the wind - waiting
for an inch of flight off of the ground - but it never happens and i open my eyes and i'm at work - still being called el diablo by gerardo......

if i knew what to do about this - i'd sell everything and travel the world

wait.......

interesting seeing how this is 2008

guess what i'm wearing


so im at work - but let me preface the story by saying people
say the strangest shit to me all the time
like that i look like punk from i love new york - not true

or even back in 1998 that i looked like hootie
not too sure about that either

but at work people tend to say stuff to me - that is " crass " a new word i am starting to use in me ever expanding vocabulary

so this cook i shall not mention names - was wearing blue nail polish
and i asked her is she wearing matching socks - she said no but i am wearing
something else that matches.....

we sort of have a history - i will embellish later on

but after reading this i guess that you really had to be there .....

i'm a world traveler


so yeah i was at this wedding today - in some country adjacent to water
it was actually sunday the 14th - and it was moon cake day - hence the joyous
celebratin' and a big ass pot of soup

so yeah I don't know any of these people - it was all a bad dream

i add some photos to my page to seem more wordly and wildly popular
but it is not working....

this is mainly what keeps me up at night

Burrito anyone?


ok since i live in the old pueblo... i know of a few good burrito hot spots
los betos
nico's
paco's - my favorite purely based on location
and chipotle - yes the mc donalds owned fast fair ( as my dad calls it )
chain of burrito - style burros and all the fixins
but if you do the research - they are serving really fresh - and good quality
burritos - for the masses who have not had the fortune of actually having authentic
sonoran style mexican food -

( those are the same who prefer their burritos - chimi changa style)

but there is a burrito that has found me - - it is a gf/cf style
made by the more than regularly famous Nicci
( if her website was up and running you could check it out here )
it is a turkey chorizo, yukon gold and vegan sour cream burrito all stuffed in a brown rice tortilla

wait before you un-bookmark this page - conceptually and theoretically
it works and taste wise --if you are following the gf/cf diet
its the bomb diggity
its all that and a ham sandwich - minus the bread because of the gluten

ok I'll admit it i am a fan of freckles -
but only on or around the nose slash face - or where ever
i had the luck of inter mingling with a few
one was recent - a shoe lacer in modesto-
she put the caps on shoelaces so they won't unravel
i still think she was the one... but
my the one's always end up crazy

don't talk just listen


i've got good listening skills
at this point in time a lot of people are constantly talking to me
and i listen - w/o any judgement

what are you doing mid december 2012


me - i won't be here - where ever here is - at this precise moment in time - I mean here
like when you are sitting beside me not talking here - anyway
a small concern the LHC is being turne don tomorrow
and no I'm not speaking on the LBC where tony's friend is from
the LHC or Large Hadron Collider

is sort of a machine that will simulate the big bang - or the seconds directly after the big bang - they say nothing will happen - others say that a black hole will form and eat the earth from the inside out

stephen hawking says - it's safe
i'll put my money on old steve --

with a face like that - how could he be wrong

on another note trading a beso through an e-mail does not count as a first kiss

chronic small vessel ischemia

it looks like my father had a minor stroke ( called chronic small
vessel ischemia ) on the 16th of august
in the next few weeks he will undergo a series of tests
including the one he had today a cat scan
and these in the weeks to come
a MRI, a doppler test of the cartoid arteries and an echo test of the heart

so as of right now he is doing ok - but we don't know exactly what is going on with him
suddenly - everything in my life has gone way down on my list of priorities

i guess that pretty much sums up my guest chef weekend -
a question posed to me by a vary tall ( 6'3 3/4" ) very drunk woman
but that really is the end of the story.

the weekend went well - better than expected - a few " damn your kitchen is small "
and a couple of " we really are professionals "
and me trying to remember everyone's name - that I met that weekend.

but the food - which was really the star of the weekend - did the job
we actually ran low on items friday night and we had to remake the following nights menu
pretty much day of.

but the second night went more smoothly - and we got positive feedback from everyone...
I am anxious to do it again - when my roller coaster of a job lets me breathe again
in three months....

The weekend did for me a few things - it made me realize that i need to be cooking ny food - not anyone elses - good wine is good and root beer on tap when available is the bomb - oh and that tony and i work well together - but must take time out to eat -

oh the other highlight of the weekend was me expressing my intent for the evening by saying rather loudly " I'll take the big one. " and Tony responding that she was married......
